Date Night Dinner
Thursday night is date night. And while we sometimes don't hold as true to that as we once did (last spring we were part of an all-star trivia team every Thursday night) we still mentally block off Thursday nights for just us.
Last night was no exception, and I decided to dig into my recipe chest for a new dish. After looking through the fridge, cupboards, and new spice chest (yay) I came up with a pretty good menu. I would call last nights meal, FUSION. Yeah, nothing really went together per se, but it definitely tasted excellent!
The menu:
- Chicken shish kabobs marinated in Dad's legendary sauce
- Becky Bott's spinach and strawberry salad
- Ginger ale mojito
First things first, the sauce I use to marinated any and every kind of meat is one my dad taught me for steaks. Its a simple teriyaki marinade with beautiful results. Just one part soy sauce, one part olive oil and a bit of seasoned salt. Delicious.

Last nights shish kabobs had chicken, orange bell peppers, and vidalia onions. Shish kabobs are pretty straight forward so I will move along to...

Becky Bott's Spinach and Strawberry Salad (Which really should be renamed, "Oh my! MAKE THIS SALAD Salad")
-Fresh spinach
-Fresh strawberries

Dressing (and this is the part where the salad becomes a masterpiece)
-1 T poppy seeds
-1 T sesame seeds
-1 t dried onion
-1/4 t paprika
-1/2 cup sugar
-1/2 cup oil
-1/4 apple cider vinegar

Combine. Enjoy. Eat some more.

It was so delicious, I had two chicken breasts laying around so I did a quick glaze on them with this dressing and threw them on the grill. That will be my lunch today on a bed of spinach with more strawberries! Uhm, yum. And yes, knowing that makes my morning so less productive.

p.s. food pics are looking a little better huh? Yeah, I remembered that the macro setting can really make flower pictures pop, so probably the same with food!
